"biting off more than you can chew" means trying to do too much. Or trying to do something which is too difficult for you.
「bite off more than you can chew」は「噛めないほど多くのものを口に入れる」の直訳で、「自分のできる以上のことをする」や「無理をする」の意味となります。
Example:
A: You already have so much work? Why did you volunteer to organise the new year party?!
B: You're right... I might have bitten off more than I can chew...
A: 仕事はもう精一杯で、なぜ忘年会の計画もやりたいと言ってたの？
B: 確かに。。。無理をしちゃったかも。。
